Let's cook

Mix flour, cornstarch, yeast and sugar, then water, to make a thick sticky batter. Cover for 45–60 minutes until risen.
Heat the oil in a deep pot to about 170°C. Do not fill more than halfway, and keep water away from hot oil.
Use two lightly oiled spoons to shape small balls. Fry in batches, turning, for 4–6 minutes until golden and cooked in the centre.
Drain on a rack and drizzle with date syrup to serve. Never pour the syrup into the frying oil.
